Getting creative with kale

We got our first CSA box last week - I had been warned of the amount of leafy greens that would make up our early-season boxes, but somehow we managed to incorportate everything into our meals last week. Kale? Cooked it with tomatoes and feta cheese. Spinach? Spinach spaghetti. Tons of salad greens, so Mike, Georgie, and myself were eating salad every night last week. Henry won't touch the stuff. He was aghast nearly every night. "Why do you like eating leaves?" he asked. He's going to be a tough convert. We did manage to eat nearly everything in our box though - all we have left is some basil and chives.

If anyone out there is looking for a cookbook to add to your collection, I would suggest "How to Cook Everything" by Mark Bittman. (And thanks to either Aunt Ilene or Cousin Eli - I can't remember which one of you gave me the original recommendation!)

Mike and I were able to enjoy a little weekend getaway to the Twin Cities last weekend, which was nice. Mimi & Grampy came up to be on babysitting duty and they capped off the weekend by seeing the Dora Live! show in Minneapolis. Georgie loved it, but Henry is getting a little too old for it, which makes me sad. He is now into the "Transformers" movie, and especially Megan Fox, who is apparently, in the words of my husband, "a real fox." I am so not ready for this. I mean, 6 months ago WordGirl was his favorite girl. What happened?

And summer vacation has kind of started - the semester ended at the university last week, I submitted my grades for the one class I taught, and Mike is now on his summer contract, which translates to lots more time at home this summer. Let's all take a moment to pray that all of this family togetherness will be a good thing.

For some reason, this entire post had me laughing out loud! Glad to hear that Georgie loved Dora. Ainsley was a big fan too!
